Electric Ranges

Electric ranges use either exposed coil elements, a smooth ceramic-glass cooktop with hidden elements, or induction technology. All three require a dedicated 240V circuit. Ovens use one or two electrical heating elements (bake and broil) and a temperature sensor to regulate heat.

Cooking Performance

Stovetop

Gas wins for stovetop cooking. The open flame responds instantly to adjustments --- turn it down and heat drops immediately. This makes gas superior for techniques that require quick temperature changes: sauteing, stir-frying, simmering sauces, and charring. Many professional chefs prefer gas for this responsiveness.

Electric coil and smooth-top elements are slower to respond and retain heat longer --- a pot doesn't stop boiling as quickly when you turn down an electric burner. Induction electric (a separate category) is actually the fastest and most responsive cooktop technology available, surpassing gas in response time.

Oven

Electric ovens generally produce more consistent, even heat in the oven cavity. The uniform glow of a bake element combined with the sealed, dry environment makes electric ovens preferred by most bakers. Gas ovens have a slightly moist heat (combustion produces water vapor) and can have more hot spots, particularly in budget models.

Energy Cost

In most US markets, natural gas is significantly cheaper per BTU than electricity, making gas ranges less expensive to operate. The difference is most pronounced in areas with high electricity rates. In regions with cheap electricity or expensive gas, the gap narrows considerably.

Electric ranges eliminate combustion-related risks but present burn hazards from surfaces that stay hot long after use (especially smooth-top models). Both are safe when properly installed and used correctly.

Induction cooktops are the safest option --- the surface only heats where a compatible pan is present and cools within seconds of removing the pan.
